    Quinoa Stuffed Peppers

    Ingredients 8 Bell Peppers 2 Cups Pre-washed Quinoa Olive Oil 1lb Ground Beef or Ground Turkey 1/2 Yellow Onion, Diced 2 Cloves Garlic, Finely Chop 48 ounces diced tomatoes 1 6oz can tomato paste 1 Tbs Italian Seasoning 1tsp onion powder 1tsp garlic powder 1/2c mozzarella 1/2c parmesan cheese Directions Pre heat oven to 350 degrees F. Cook quinoa. Brown ground beef. Sauté onions and garlic in olive oil. Once onions are soft, add diced tomatoes straight from the can, do not strain water out.
