    Best Guacamole Ever!

    At least we think so. Sophia scoops it out of the bowl and eats it with a spoon. She doesn’t even require chips. Ingredients 3-4 Avocados 1/4 cup Red Onion, Minced 1 Roma Tomato, Diced Jalapeños, minced (optional) 1 tsp Cumin Salt to taste 1 Tbs lemon or lime juice Directions Save seed from avocado aside. Mash the avocado in a bowl. Add onions, jalapeños, lemon/lime and cumin to bowl. Add tomatoes after you mix everything above. I don’t like to over mix or squash the tomatoes.     Quinoa Stuffed Peppers

    Ingredients 8 Bell Peppers 2 Cups Pre-washed Quinoa Olive Oil 1lb Ground Beef or Ground Turkey 1/2 Yellow Onion, Diced 2 Cloves Garlic, Finely Chop 48 ounces diced tomatoes 1 6oz can tomato paste 1 Tbs Italian Seasoning 1tsp onion powder 1tsp garlic powder 1/2c mozzarella 1/2c parmesan cheese Directions Pre heat oven to 350 degrees F. Cook quinoa. Brown ground beef. Sauté onions and garlic in olive oil. Once onions are soft, add diced tomatoes straight from the can, do not strain water out. Add tomato paste, cooked ground beef, onion powder and garlic powder. Cook sauce on medium heat for about 10 minutes. Shut off heat and add…
