Quinoa Stuffed Peppers

Ingredients

8 Bell Peppers

2 Cups Pre-washed Quinoa

Olive Oil

1lb Ground Beef or Ground Turkey

1/2 Yellow Onion, Diced

2 Cloves Garlic, Finely Chop

48 ounces diced tomatoes

1 6oz can tomato paste

1 Tbs Italian Seasoning

1tsp onion powder

1tsp garlic powder

1/2c mozzarella

1/2c parmesan cheese

Directions

Pre heat oven to 350 degrees F. Cook quinoa. Brown ground beef. Sauté onions and garlic in olive oil. Once onions are soft, add diced tomatoes straight from the can, do not strain water out. Add tomato paste, cooked ground beef, onion powder and garlic powder. Cook sauce on medium heat for about 10 minutes. Shut off heat and add Quinoa, meat sauce and parmesan cheese to a bowl and mix. Line peppers, cleaned out and tops off inside a baking dish. Scoop mixture into peppers and sprinkle with mozzarella cheese on top. Pour some of the left over mixture into the bottom of the baking dish around the peppers. Bake in oven for 30-45 minutes or until peppers are tender.
